Brazilian Sweet Rice Gratin
A sweet and creamy Brazilian-inspired rice gratin that's perfect for a weeknight dinner. This dish combines the richness of sweet rice with the crunch of a crispy topping.
Ingredients
- β1 cup uncooked sweet ricepreferably short-grain rice
- β1 can light coconut milkfull-fat for richer flavor
- β2 tablespoons unsalted buttersoftened
- β1/4 cup brown sugaror to taste
- β2 tablespoons flourall-purpose flour
- β2 cups gratinpreferably a sweet bread or brioche

Preheat the oven to 375Β°F (190Β°C).

In a medium saucepan, combine the sweet rice and coconut milk. Bring to a boil over medium heat, then reduce the heat to low and simmer for 18-20 minutes or until the liquid has been absorbed.

In a separate pan, melt the butter over medium heat. Add the brown sugar and cook, stirring constantly, for 2-3 minutes or until the sugar dissolves.

Stir in the flour to make a roux, cooking for 1-2 minutes.

Gradually pour the coconut milk mixture into the roux, whisking continuously to prevent lumps.

Bring the mixture to a simmer and cook for 5-7 minutes or until it thickens.

In a greased 9x13-inch baking dish, arrange the cooked sweet rice in an even layer.

Pour the coconut milk mixture over the rice and smooth the top.
