Brazilian Cheese Frittata
A gluten-free, cheesy frittata perfect for breakfast or brunch, inspired by Brazilian flavors.
Ingredients
- β6 oz Light Brazilian cheeseShredded
- β2 oz Crumbly cheeseCrumbled
- β8 large Eggs
- β1/4 cup Fresh cilantroChopped
- β1/2 cup Red onionDiced
- β1 clove GarlicMinced
- βto taste Salt

Preheat oven to 375Β°F (190Β°C).

In a large skillet, heat 1 tablespoon of oil over medium heat.

Add diced red onion and cook until softened, about 3-4 minutes.

Add minced garlic and cook for 1 minute.

Add chopped cilantro and cook for 1 minute.

In a large bowl, whisk together eggs and a pinch of salt.

Add shredded light Brazilian cheese and crumbled crumbly cheese to the eggs. Mix well.

Pour the egg mixture over the skillet with the onion mixture.

Transfer the skillet to the oven and bake for 20-25 minutes or until the frittata is set.
