Vietnamese Pork Noodle Bowl
A flavorful and refreshing Vietnamese-inspired dish made with pork, noodles, and crunchy vegetables.
Ingredients
- ●1 pound Pork shoulderSlice into thin strips before cooking
- ●8 ounces Rice noodles
- ●2 tablespoons Vietnamese light soy sauce
- ●1 cup Crunchy Vietnamese pickled carrots and daikon
- ●1/4 cup Fresh cilantro leaves
- ● Crushed black pepper
- ●1/4 cup Sliced scallions

Cook the rice noodles according to package instructions. Drain and set aside.

In a large skillet or wok, heat 1 tablespoon of oil over medium-high heat.

Add the sliced pork and cook until browned, about 3-4 minutes. Remove from heat and set aside.

In the same skillet, add the remaining 1 tablespoon of oil and sauté the pickled carrots and daikon until slightly caramelized.

Add the cooked noodles, soy sauce, and cooked pork back into the skillet. Stir to combine.

Transfer the noodle mixture to a serving bowl and garnish with cilantro leaves, scallions, and crushed black pepper.
