Brazilian Pumpkin Empanadas
Crispy empanadas filled with a delicious pumpkin mixture, inspired by the flavors of Brazil. Perfect as a snack or dessert.
Ingredients
- β1 cup Pumpkin puree
- β1 package Light flaky pastry dough (for empanadas)
- β1 cup shredded Brazilian cheese (or mozzarella)
- β2 tablespoons Brown sugar
- β1/2 teaspoon Cinnamon
- β1/4 teaspoon Salt

Preheat oven to 400Β°F (200Β°C).

Roll out the empanada dough to about 1/4 inch thickness.

Cut out circles of dough using a cookie cutter or the rim of a glass.

In a bowl, mix together pumpkin puree, Brazilian cheese, brown sugar, cinnamon, and salt.

Place a spoonful of the pumpkin mixture in the center of each dough circle.

Fold the dough in half to form a half-moon shape, and press the edges together to seal.

Brush the tops of the empanadas with a little bit of water, and sprinkle with additional cinnamon if desired.

Place the empanadas on a baking sheet lined with parchment paper.

Bake for 20-25 minutes, or until the empanadas are golden brown.
