Brazilian Pumpkin Empanada Casserole
A twist on traditional empanadas, this casserole combines the flavors of Brazil and pumpkin in a vegetarian dish.
Ingredients
- β1 package Brazilian Empanada Dough
- β1 can (15 oz) Canned Pumpkin
- β1/4 cup Light Brown Sugar
- β1 cup Fluffy Whipped Cream
- β1 tsp Cinnamon
- β1/4 tsp Nutmeg
- β1 tsp Sagedried

Preheat oven to 375Β°F (190Β°C).

Roll out the empanada dough to a thickness of 1/4 inch.

Cut out circles of dough using a cookie cutter or the rim of a glass.

In a separate bowl, mix together the pumpkin, brown sugar, cinnamon, nutmeg, and sage.

Place a spoonful of the pumpkin mixture onto one half of each dough circle.

Fold the dough in half and press the edges together to seal.

Place the empanadas in a baking dish and cover with whipped cream.
