Irish Soda Bread Dumplings

Ingredients

- β2 tablespoons irish buttersoftened
- β1 cup all-purpose flourfor dusting
- β2 large eggsbeaten
- β1/2 cup milkroom temperature
- β1/4 teaspoon saltoptional
- β1/4 cup grated cheddar cheeseoptional
- β2 tablespoons chopped scallionsoptional

Cut the soda bread into 2-inch cubes.

In a large bowl, whisk together the flour, eggs, milk, and salt (if using).

Add the softened butter and grated cheddar cheese (if using). Mix until a shaggy dough forms.

Add the soda bread cubes and mix until the dough is evenly coated.

Turn the dough out onto a floured surface and gently knead until the dough comes together.

Use a cookie scoop or spoon to portion out the dough into 8-10 equal pieces.
