Ethiopian-Inspired Skillet Chicken with Banana Salsa
A flavorful and spicy chicken dish with a sweet banana salsa, inspired by Ethiopian cuisine. Serve with a side of injera bread or over rice.
Ingredients
- β1 lb chicken breast
- β2 tbsp light oil
- β3 cloves garlic
- β1 medium onion
- β2 ripe banana
- β skilletfor cooking
Instructions

Heat 2 tbsp of light oil in a large skillet over medium-high heat.

Add the chicken breast and cook for 5-6 minutes per side, or until cooked through.

Remove the chicken from the skillet and set aside.

Add 2 cloves of minced garlic to the skillet and cook for 1 minute.

Add the diced onion to the skillet and cook for 3-4 minutes, or until softened.

Add the sliced banana to the skillet and cook for an additional 2 minutes.

Return the chicken to the skillet and stir in the banana mixture.
