Uruguayan-Style Grilled Chorizo Casserole
A South American-inspired casserole featuring chorizo, cucumber, and a hint of garlic. Perfect for a quick and flavorful dinner.
Ingredients
- β1 pound Uruguayan chorizoCut into 1-inch slices
- β2 medium CucumberSliced into 1/4-inch thick rounds
- β1 (10.5 oz) box Light casseroleDo not prepare according to box instructions
- β3 cloves GarlicMinced
- β1/4 cup Olive oilFor brushing chorizo
- βto taste Salt

Preheat grill to medium-high heat.

Season chorizo slices with salt and pepper.

Brush chorizo slices with olive oil.

Grill chorizo for 2-3 minutes per side, or until slightly charred.
