Mediterranean Gratin Courgettes
A flavorful and easy-to-make side dish that combines the sweetness of courgettes with the savory flavors of the Mediterranean.

- β2 tablespoons olive oilfor greasing
- β2 cloves garlicminced
- β2 tablespoons lemon juice
- β1 cup feta cheesecrumbled
- β1/4 cup chopped fresh parsleyfor garnish

Preheat the oven to 375Β°F (190Β°C).

Grate the courgettes and place them in a colander. Sprinkle with salt to draw out excess moisture.

Let the courgettes sit for 10 minutes, then squeeze out as much liquid as possible.

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and cook for 1 minute.

Add the grated courgettes to the skillet and cook for 5 minutes, stirring occasionally.

Transfer the courgettes to a baking dish and drizzle with lemon juice.

Sprinkle the crumbled feta cheese over the top of the courgettes.

Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
