Uruguayan Rice Bowl
A flavorful and easy-to-make Uruguayan-inspired dish with a twist of stir-frying vermicelli noodles.
Ingredients
- β1 pound Veal ChoripanUruguayan-style sausage
- β2 cups Cooked Ricepreferably leftover or day-old
- β1 cup Vermicelli Noodlesstir-fry style
- β1 medium Red Onionthinly sliced
- β1/4 cup Cilantrochopped
- β2 tablespoons Olive Oilfor stir-frying
- βto taste Saltfor seasoning
- βto taste Black Pepperfor seasoning
Instructions

Cook vermicelli noodles according to package instructions. Drain and set aside.

Slice the red onion thinly.

Heat olive oil in a large skillet over medium-high heat.

Add the sliced red onion and cook for 2-3 minutes until slightly caramelized.

Add the cooked vermicelli noodles to the skillet and stir-fry for 2-3 minutes.

Add the cooked choripan to the skillet and stir-fry for another 2 minutes.

Season with salt and black pepper to taste.

Serve the stir-fry mixture over cooked rice.
