Jamaican Chicken Curry
A flavorful and aromatic curry made with chicken, Jamaican curry powder, and a hint of coconut milk. Serve over rice or with naan bread for a delicious and satisfying meal.
Ingredients
- β1 pound, cut into 1-inch pieces chicken breastboneless and skinless
- β2 teaspoons Jamaican curry powder
- β1 can, full-fat light coconut milk14 oz can
- β1 medium, chopped onion
- β3 cloves, minced garlic
- β2 tablespoons olive oil
- β1 teaspoon salt
- β1/2 teaspoon black pepper

Heat oil in a large skillet over medium-high heat.

Add chicken and cook until browned, about 5 minutes.

Remove chicken from skillet and set aside.
