Pibil Chicken Tacos
A traditional Mexican dish from the Yucatan region, featuring marinated chicken cooked in a smoky pibil sauce, served with fresh tacos and your choice of toppings.
Ingredients
- β1 1/2 pounds chicken breastsboneless, skinless
- β1/2 cup pibil saucesee below for recipe
- β2 tablespoons light oilfor brushing chicken
- β2 norteno chiliesdried, stemmed, and seeded
- β1 medium oniondiced
- β3 cloves garlicminced
- β1 teaspoon cuminground
- β1/2 teaspoon paprikaground
- β1/2 teaspoon saltto taste
- β8-10 tortillascorn, for tacos

Preheat grill to medium-high heat.

In a blender or food processor, combine pibil sauce ingredients and blend until smooth.

In a large bowl, whisk together cumin, paprika, salt, and a few grinds of black pepper.

Add the chicken to the bowl and toss to coat with the spice mixture.

Brush the grill with light oil to prevent sticking.

Add the chicken to the grill and cook for 5-7 minutes per side, or until cooked through.

Transfer the chicken to a cutting board and let rest for 5 minutes before slicing.

Warm the tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.

Assemble the tacos by slicing the chicken and adding it to a tortilla, followed by your choice of toppings.
