Thai-Style Twice-Fried Potato Fritters
A crispy and flavorful snack inspired by Thai street food. Twice-frying the fritters gives them a crunchy exterior and fluffy interior.
Ingredients

- β1 large peruvian gold potatoes
- β1 large yukon potatoes
- β1 package frittersused for inspiration

Grate the light potatoes, peruvian gold potatoes, and yukon potatoes.

Squeeze out as much moisture as possible from the grated potatoes.

In a bowl, mix together the grated potatoes, 1 egg, and 1/4 cup of flour.

Heat about 1-2 inches of oil in a deep frying pan over medium-high heat.

Using a spoon, drop small amounts of the potato mixture into the oil.

Fry the fritters until they are golden brown, about 2-3 minutes.

Remove the fritters from the oil and let them cool on a paper towel-lined plate.
