Algerian Doraji Tagine
A hearty tagine made with tender doraji, fragrant algerian spices, and a hint of pungency from the onions.
Ingredients
- β2 cups, cleaned and sliced Doraji
- β2 tsp Algerian spice blend
- β2 tbsp Light olive oil
- β1 large, sliced Onion
- β3 cloves, minced Garlic
- β1 tsp Salt
- β1 tsp Black pepper
- β1/4 cup, chopped Fresh parsley
Instructions

Heat oil in a large clay or ceramic tagine over medium heat.

Add onion and garlic, cook until softened, about 5 minutes.

Add the sliced doraji and cook for 5 minutes.

Add the Algerian spice blend, salt, and black pepper, stirring to combine.

Reduce heat to low, cover, and simmer for 20-25 minutes or until doraji is tender.

Garnish with parsley, serve hot over couscous or rice.
