Jamaican Fish Curry

Ingredients
- β400g Fish FilletsCod or Snapper work well
- β2 tbsp Jamaican Curry PowderAvailable in most supermarkets
- β250ml Coconut MilkFull-fat for richness
- β1 large OnionChopped
- β3 cloves GarlicMinced
- β1 tsp SaltTo taste
- β2 tbsp Light Olive OilFor cooking

Instructions

Heat oil in a large pan over medium heat.

Add the chopped onion and cook until softened, about 5 minutes.

Add the minced garlic and cook for a further 1 minute.

Add the Jamaican curry powder and cook for 1 minute, stirring constantly.

Add the coconut milk and bring to the boil.

Reduce heat to low and simmer for 10 minutes.

Add the fish fillets and cook for 8-10 minutes, or until cooked through.

Season with salt to taste.
