Peruvian Stir Fry with Parmigiano Reggiano
A quick and flavorful Peruvian-inspired stir fry featuring stir-fried vegetables and topped with crumbled Parmigiano Reggiano cheese.
Ingredients
- β2 tablespoons Vegetable oil
- β1 medium Onion
- β1 medium Red bell pepper
- β1 medium Zucchini
- β1 medium Tomato
- β2 cloves Garlic
- β2 cups Cooked rice
- β1/4 cup, crumbled Parmigiano Reggiano cheese

1. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.

2. Add the onion and red bell pepper and stir-fry for 3-4 minutes.

3. Add the zucchini and tomato and stir-fry for an additional 3-4 minutes.

4. Add the garlic and stir-fry for 1 minute.

5. Add the cooked rice to the skillet and stir-fry for 2-3 minutes.

6. Transfer the rice mixture to a serving platter.

7. Sprinkle the crumbled Parmigiano Reggiano cheese over the top of the rice mixture.
