Spicy Thai Chicken Noodle Soup
A hearty and flavorful Thai-inspired noodle soup made with chicken, noodles, and a spicy kick.
Ingredients
- β1 pound boneless, skinless chicken breastcut into bite-sized pieces
- β8 ounces rice noodlespreferably Thai-style rice noodles
- β2 cups light coconut milkfull-fat or low-fat, whichever you prefer
- β4 cups chicken brothhomemade or store-bought
- β2 tablespoons spicy Thai red curry pasteadjust to taste
- β1 tablespoon fish sauceoptional, for added depth of flavor
- β1 tablespoon sugaroptional, to balance out the heat
- β1/4 cup fresh cilantrochopped, for garnish

Heat 2 tablespoons of oil in a large pot over medium-high heat.

Add the chicken and cook until browned, about 5-7 minutes.

Remove the chicken from the pot and set aside.

Add the curry paste to the pot and cook, stirring constantly, for 1-2 minutes.

Pour in the chicken broth, coconut milk, fish sauce, and sugar.

Bring the mixture to a boil, then reduce the heat to medium-low and simmer for 10-15 minutes.
