Roast Paella
A flavorful Spanish-inspired paella dish made with chorizo and shrimp, served with a side of fresh vegetables.
Ingredients
- β1 cup Paella riceshort-grain rice
- β2 cups Roast chicken brothhomemade or store-bought
- β2 tablespoons Olive oiluse a neutral-tasting oil
- β1 pound ChorizoSpanish-style sausage
- β1 pound Shrimppeeled and deveined
- β1 medium Oniondiced
- β3 cloves Garlicminced
- β1 medium Bell pepperdiced
- β2 medium Tomatodiced
Instructions

Heat the olive oil in a large paella pan over medium-high heat.

Add the chorizo and cook, breaking it up with a spoon, until browned, about 5 minutes.

Add the onion, garlic, and bell pepper and cook, stirring occasionally, until the vegetables are tender, about 8 minutes.

Add the tomato and cook, stirring occasionally, for 2 minutes.

Stir in the paella rice and cook for 1-2 minutes.

Add the chicken broth and bring to a boil.

Reduce the heat to low, cover, and simmer for 20-25 minutes or until the rice is cooked and the liquid has been absorbed.

Stir in the shrimp and cook, uncovered, until pink and cooked through, about 5 minutes.

Remove from heat and let rest for 5 minutes before serving.
