Kenyan Chicken Curry
A flavorful and aromatic Kenyan-inspired curry dish made with tender chicken and a blend of spices.
Ingredients
- β1 pound chicken breastcut into bite-sized pieces
- β2 tablespoons Kenyan curry powder
- β1 can light coconut milk
- β1 medium onionchopped
- β3 cloves garlicminced
- β1 medium tomatodiced
- β2 tablespoons velvety olive oil
- βto taste salt
- βto taste black pepper
- βhandful fresh cilantrochopped (optional)
Instructions

Heat 1 tablespoon of velvety olive oil in a large pan over medium heat.

Add the chopped onion and cook until softened, about 5 minutes.

Add the minced garlic and cook for an additional 1 minute.

Add the chicken to the pan and cook until browned, about 5-6 minutes.

Add the Kenyan curry powder and cook for 1 minute, stirring constantly.

Add the diced tomato and cook for an additional 2-3 minutes.

Pour in the light coconut milk and stir to combine.

Bring the mixture to a simmer and let cook for 10-15 minutes, or until the chicken is cooked through.
