Filipino Kaldereta
A classic Filipino dish made with tender pork in a rich and savory tomato-based sauce, flavored with citrus and spices.
Ingredients
- β1 pound Pork shouldercut into bite-sized pieces
- β1 medium Onionchopped
- β3 cloves Garlicminced
- β1 cup Tomato sauce
- β2 tablespoons Vinegarapple cider vinegar
- β2 tablespoons Soy sauce
- β2 Bay leavesfresh or dried
- β1 teaspoon Black pepperfreshly ground

In a large pot or Dutch oven, heat 2 tablespoons of oil over medium heat.

Add the chopped onion and cook until softened, about 5 minutes.

Add the minced garlic and cook for 1 minute.

Add the pork pieces and cook until browned on all sides, about 5-7 minutes.

Add the tomato sauce, vinegar, soy sauce, bay leaves, and black pepper.

Bring the mixture to a simmer and cook for 1 1/2 hours, or until the pork is tender.
