New Potatoes Gratin
A simple and flavorful side dish made with thinly sliced new potatoes, cream, and cheese.
Ingredients
- ●2 pounds, thinly sliced New potatoes
- ●4 tablespoons Unsalted butter
- ●2 tablespoons All-purpose flour
- ●1 cup Heavy cream
- ●1 cup Grated Gruyère cheese
- ●to taste Salt and pepper
- ●2 sprigs Fresh thyme

Preheat the oven to 375°F (190°C).

In a large saucepan, combine the sliced potatoes and enough cold water to cover them. Bring to a boil over high heat, then reduce the heat to medium-low and simmer for 5 minutes.

Drain the potatoes and set them aside to dry.

In a large skillet, melt 2 tablespoons of butter over medium heat. Add the flour and cook, stirring constantly, for 1 minute.

Slowly pour in the heavy cream, whisking constantly to avoid lumps. Bring the mixture to a simmer and cook until it thickens, about 5 minutes.

Add the Gruyère cheese to the cream mixture and stir until melted and smooth. Season with salt and pepper to taste.

In a greased 9x13-inch baking dish, create a layer of potatoes. Pour some of the cream sauce over the potatoes, then sprinkle with thyme.

Repeat the layering process until all the potatoes and cream sauce have been used, finishing with a layer of cream sauce on top.

Dot the top of the gratin with the remaining 2 tablespoons of butter.

Cover the dish with aluminum foil and bake for 30 minutes.

Remove the foil and continue baking for an additional 15-20 minutes, or until the top is golden brown and the potatoes are tender.

Remove from the oven and let cool for a few minutes before serving.
