Argentinian Empanada Chickpea Fritters
A fusion of traditional Argentinian empanadas and crispy Middle Eastern fritters, made with chickpeas and spices.
Ingredients
- ●1 cup, drained and mashed chickpeas
- ●1 package Argentinian empanada doughhomemade or store-bought
- ●1/2 cup double fried onions
- ●2 cloves garlic
- ●1 tablespoon olive oil
- ●1 teaspoon cumin
- ●1/2 teaspoon paprika
- ●to taste salt
- ●to taste pepper
Instructions

Preheat oil in a deep frying pan to 375°F (190°C).

Divide the empanada dough into 8 equal pieces.

Roll out each piece into a thin circle.

Place a tablespoon of mashed chickpeas in the center of each circle.

Sprinkle a pinch of cumin, paprika, salt, and pepper over the chickpeas.

Fold the dough in half to form a half-moon shape, and press the edges together to seal.

Heat the oil in a deep frying pan to 375°F (190°C).

Fry the fritters for 2-3 minutes on each side, until golden brown and crispy.

Drain the fritters on paper towels.

Serve hot with a side of double fried onions and a dollop of tzatziki sauce.
