Maqluba (Upside Down Middle Eastern Rice Casserole)
A traditional Middle Eastern dish where the rice and meat are cooked together in a unique upside-down style.
Ingredients
- β1 cup Basmati ricelong-grain rice
- β1 pound Ground lambor ground beef
- β2 medium Onionschopped
- β3 cloves Garlicminced
- β2 tablespoons Tomato paste
- β2 tablespoons Olive oil
- β1 teaspoon Salt
- β1 teaspoon Black pepper
- β1/2 teaspoon Paprika
Instructions

Heat the olive oil in a large saucepan over medium-high heat.

Add the chopped onions and cook until browned, about 5 minutes.

Add the minced garlic and cook for an additional minute.

Add the ground lamb and cook until browned, breaking it up into small pieces as it cooks.

Add the tomato paste, salt, black pepper, and paprika, and stir to combine.

Add the basmati rice to the saucepan and stir to combine with the meat mixture.

Cook for 2-3 minutes, stirring constantly, until the rice is lightly toasted.

Transfer the rice mixture to a 9x13 inch baking dish.

Cover the dish with a lid or foil and bake in a preheated oven at 350Β°F (175Β°C) for 25 minutes.

Remove the lid or foil and continue baking for an additional 10-15 minutes, or until the rice is cooked and the top is lightly browned.
