Spicy Northern Thai Noodle Stir Fry

- β8 oz Northern Thai noodles
- β2 tbsp Nam prik (Thai chili paste)
- β2 tbsp Vegetable oil
- β1 medium Onionthinly sliced
- β8 oz Mushroomsliced
- β1 large Bell peppersliced
- β1/4 cup Chopped fresh cilantro
- β1 tsp Soy sauce
- β1 tsp Brown sugar
- β1 tsp Fish sauce (optional)

Heat oil in a large skillet or wok over medium-high heat.

Add onion and cook until translucent.

Add mushrooms and bell pepper, cook until tender.

Add noodles and stir-fry for 2-3 minutes.

Add nam prik, soy sauce, and brown sugar. Stir-fry for another 2 minutes.

Taste and adjust seasoning with fish sauce (if using).
