Madeleine Cake
A delicate French cake made with millet flour and flavored with a hint of citrus. Perfect for a special breakfast treat.
Ingredients

- β1 cup granulated sugar
- β4 large eggsroom temperature
- β1/2 cup unsalted butter, softened
- β1 tablespoon grated lemon zest
- β2 tablespoons freshly squeezed lemon juice
- β1 teaspoon vanilla extract

Preheat the oven to 375Β°F (190Β°C).

Butter and flour 12 madeleine molds.

In a large bowl, whisk together millet flour, granulated sugar, and a pinch of salt.

In a separate bowl, whisk together eggs, softened butter, lemon zest, lemon juice, and vanilla extract.

Add the dry ingredients to the wet ingredients and mix until just combined.

Pour the batter into the prepared molds and smooth the tops.
