Lamb Skewers with Mediterranean Flair
A flavorful and colorful dish featuring marinated lamb skewers grilled to perfection, served with a side of fresh Mediterranean herbs.
Ingredients
- β1 pound Lamb shoulder, cut into 1-inch cubespreferably with some fat for flavor
- β1/4 cup Mediterranean olive oilinfused with herbs
- β2 tablespoons Lemon juicefreshly squeezed
- β2 cloves Garlic, mincedabout 2 teaspoons
- β2 tablespoons Greek yogurtplain, full-fat
- β1 tablespoon Chopped fresh oreganoabout 10 leaves
- β1 teaspoon Saltpreferably sea salt
- β1/4 teaspoon Black pepperfreshly ground

In a large bowl, whisk together olive oil, lemon juice, garlic, yogurt, oregano, salt, and pepper to make the marinade.

Add the lamb cubes to the marinade and toss to coat evenly.

Cover the bowl with plastic wrap and refrigerate for at least 2 hours or overnight.

Preheat the grill to medium-high heat (about 400Β°F/200Β°C).

Thread the marinated lamb cubes onto skewers, leaving a small space between each piece.
