Monsoon Quesadilla
A flavorful quesadilla filled with spiced chicken, onions, and cheese, inspired by the monsoon season in Mexico.
Ingredients
- β1 pound Lightly seasoned chicken breast
- β1 large Onion
- β2 teaspoons Monsoon spice blend (cumin, chili powder, paprika)
- β1 cup Shredded cheese (Monterey Jack or Cheddar)
- β4-6 Tortilla
- β1 head Sliced leaf lettuce
- β1 cup Wrapped sour creamoptional

Preheat a large skillet over medium heat.

Season the chicken breast with monsoon spice blend and cook until browned.

Add sliced onion to the skillet and cook until softened.

Shred the cooked chicken and mix with onion and cheese.

Warm tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.

Assemble the quesadillas by placing a portion of the chicken and onion mixture onto half of each tortilla, then folding in half.

Cook the quesadillas in the skillet for 2-3 minutes on each side, until crispy and melted.
