Saudi Arabian Lamb Kebabs
Tender lamb kebabs marinated in traditional Middle Eastern spices and grilled to perfection. Perfect for a quick and flavorful dinner.
Ingredients
- β1 pound lamb shoulder, boneless and cut into 1-inch cubesAsk your butcher to cut the lamb into skewer-sized pieces.
- β2 tablespoons olive oilFor brushing the kebabs during grilling.
- β2 cloves garlic, mincedUse 1 or 2 cloves depending on your taste.
- β2 tablespoons lemon juiceFreshly squeezed is best.
- β1 teaspoon ginger, gratedFresh is best.
- β1 teaspoon cuminGround cumin is fine too.
- β1/2 teaspoon paprikaSmoked paprika gives a nice smoky flavor.
- β1/2 teaspoon saltUse kosher salt or sea salt.
- β1/4 teaspoon black pepperFreshly ground is best.
- β1/4 cup green onions, choppedOptional, for garnish.

In a large bowl, whisk together the olive oil, garlic, lemon juice, ginger, cumin, paprika, salt, and pepper.

Add the lamb cubes to the marinade and mix until they're evenly coated.

Cover the bowl with plastic wrap and refrigerate for at least 2 hours or overnight.

Preheat a grill or grill pan to medium-high heat.

Thread 3-4 lamb cubes onto each skewer, leaving a small space between each piece.

Brush the kebabs with the marinade and cook for 4-5 minutes per side, or until they're cooked through.
