Vietnamese Shrimp Rieu Noodle Soup
A light and romantic Vietnamese noodle soup filled with flavorful shrimp and rich broth. Perfect for a weeknight dinner or special occasion.
Ingredients
- β2 tablespoons Rieu Pasteavailable at Asian markets
- β1 pound Shrimppeeled and deveined
- β8 ounces Bun Noodlesrice noodles
- β4 cups Light Chicken Brothlow sodium
- β2 tablespoons Fish Sauceavailable at Asian markets
- β1 tablespoon Soy Saucelow sodium
- β1 tablespoon Brown Sugaroptional
- β2 tablespoons Lime Juicefreshly squeezed
- β1/4 cup Green Onionschopped

Heat the Rieu Paste in a large pot over medium heat for 1-2 minutes.

Add the Chicken Broth and bring to a boil, then reduce the heat to low and simmer for 10 minutes.

Add the Shrimp and cook until pink and cooked through, about 2-3 minutes.

Cook the Bun Noodles according to the package instructions and set aside.

Stir in the Fish Sauce, Soy Sauce, and Brown Sugar (if using).
