Poke Salmon Bowl
A refreshing Japanese-inspired dish featuring seared salmon, mixed greens, and a zesty soy-ginger sauce.
Ingredients
- β4 (6 oz each) Japanese Salmon FilletsFresh or frozen, thawed
- β1/4 cup Lightly Salted Soy SauceLow-sodium
- β2-inch piece GingerGrated
- β1/4 cup Green OnionsThinly sliced
- β1/2 cup CucumberSliced
- β4 cups Mixed GreensBaby arugula, spinach, and/or lettuce
- β2 tbsp Poke SauceStore-bought or homemade
- βto taste Salt
- βto taste Black Pepper
- β1 tsp Sesame Seeds

1. Preheat a grill or grill pan to medium-high heat.

2. Season the salmon fillets with salt and pepper.

3. Grill the salmon for 4-5 minutes per side, or until cooked through.

4. Meanwhile, whisk together soy sauce, ginger, and poke sauce in a small bowl.

5. In a separate bowl, combine mixed greens, cucumber, and green onions.

6. To assemble the bowls, place a portion of mixed greens on each plate, followed by a grilled salmon fillet.
