Spiced Ethiopian Collard Greens
A flavorful and nutritious side dish made with lightly spiced Ethiopian collard greens. This recipe is a twist on the traditional Ethiopian gomen besega.
Ingredients
- ●2 bunches collard greens
- ●1 large onion
- ●3 cloves garlic
- ●2 inches ginger
- ●2 tablespoons niter kibbeh or vegetable oil
- ●2 teaspoons ground cumin
- ●1 teaspoon ground coriander
- ●1 teaspoon turmeric
- ●1 teaspoon salt
- ●1/2 teaspoon black pepper
- ●1/2 teaspoon beeswax or niter

1. Rinse the collard greens and remove the stems.

2. Chop the onion and mince the garlic and ginger.

3. Heat the niter kibbeh or vegetable oil in a large pan over medium heat.

4. Add the onion and sauté until lightly browned.

5. Add the garlic and ginger and sauté for an additional 2 minutes.

6. Add the cumin, coriander, turmeric, salt, and black pepper to the pan and sauté for 1 minute.

7. Add the chopped collard greens to the pan and sauté until wilted.

8. Stir in the beeswax or niter and continue to cook for an additional 5 minutes.

9. Serve the spiced collard greens hot.
