Spiced Fregola Pilaf
A flavorful and aromatic pilaf dish from the Indian subcontinent, made with fregola and a blend of warming spices.
Ingredients
- β1 cup Fregola
- β2 tsp Lightly spiced Indian pilaf spice blend
- β2 tbsp Olive oil
- β1 medium Onion
- β3 cloves Garlic
- β1 medium Red bell pepper
- β1/4 cup Fresh cilantro
- βto taste Salt
- β2 tbsp Lemon juice

Heat the oil in a large saucepan over medium heat.

Add the onion and cook until softened, about 5 minutes.

Add the garlic and cook for 1 minute.

Add the red bell pepper and cook for 2 minutes.

Add the fregola and cook for 1-2 minutes, stirring constantly.

Add the pilaf spice blend and stir to combine.

Add 2 cups water to the saucepan and bring to a boil.

Reduce the heat to low, cover, and simmer for 15-20 minutes, or until the fregola is tender.
