Spiced Chickpea Tagine
A hearty and flavorful stew originating from the Middle East, made with spiced chickpeas and a hint of sweetness.
Ingredients

- β2 tablespoons olive oilfor cooking
- β1 medium onionchopped
- β2 inches gingersliced
- β3 cloves garlicminced
- β1 teaspoon cuminground
- β1 teaspoon corianderground
- β1/2 teaspoon cinnamonground
- β1/2 teaspoon saltto taste
- β2 tablespoons honeyoptional

Heat the olive oil in a large Dutch oven or saucepan over medium heat.

Add the onion, ginger, and garlic and cook until the onion is softened, about 5 minutes.

Add the cumin, coriander, cinnamon, and salt. Cook for 1 minute, stirring constantly.

Add the chickpeas, honey (if using), and 1 cup of water. Stir to combine.

Bring the mixture to a simmer, then reduce the heat to low and cook, covered, for 20-25 minutes, or until the flavors have melded together and the chickpeas are tender.
