Spiced Keto Zanzibari Chicken Stir Fry
A flavorful and keto-friendly chicken stir fry with the warm, aromatic flavors of Zanzibar.
Ingredients
- β1 pound Chicken breastboneless, skinless
- β2 teaspoons Lightly zanzibari spice blendavailable at most spice stores
- β1 tablespoon Gingergrated
- β2 tablespoons Vegetable oil
- β1 cup Green onionschopped
- β1 cup Sliced bell peppersany color
- β1 cup Sliced zucchini
- β2 tablespoons Soy sauce (make sure it's keto-friendly)
- β2 tablespoons Coconut aminos

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.

Add the chicken and cook until browned, about 5-6 minutes.

Transfer the chicken to a plate and set aside.

In the same skillet, add the remaining 1 tablespoon of vegetable oil.

Add the grated ginger and cook for 1 minute, until fragrant.

Add the sliced bell peppers and zucchini and cook until tender, about 3-4 minutes.

Add the chopped green onions and cook for an additional minute.

Return the chicken to the skillet and stir in the lightly zanzibari spice blend, soy sauce, and coconut aminos.
