Japanese Sweet Curry Chicken
A delicious and easy-to-make Japanese-inspired sweet curry dish featuring chicken breast. This dish is perfect for a weeknight meal.
Ingredients
- β1 1/2 pounds Boneless, skinless chicken breastcut into bite-sized pieces
- β1 can (14 oz) Light coconut milk
- β2 tablespoons Sweet Thai red curry paste
- β2 tablespoons Soy sauce
- β1 tablespoon Brown sugar
- β1 tablespoon Rice vinegar
- β1 tablespoon Sesame oil

Heat 1 tablespoon of sesame oil in a large skillet or wok over medium-high heat.

Add the chicken to the skillet and cook until browned and cooked through, about 5-7 minutes.

Remove the chicken from the skillet and set aside.

In the same skillet, add the remaining 1 tablespoon of sesame oil.

Add the sweet Thai red curry paste and cook for 1-2 minutes, until fragrant.

Pour in the coconut milk and bring the mixture to a simmer.

Add the soy sauce, brown sugar, and rice vinegar to the skillet and stir to combine.

Return the chicken to the skillet and stir to coat with the curry sauce.

Reduce heat to low and simmer for 5-7 minutes, until the sauce has thickened.
