Lime Leaf Braised Chicken
A flavorful and aromatic dish made by slow-cooking chicken in a mixture of lime juice, herbs, and spices.
Ingredients
- β1 lb chicken breastboneless and skinless
- β2 tbsp fresh lime juicefreshly squeezed
- β4-6 lime leavesfresh
- β2 tbsp coconut oilfor browning
- β1 medium onionchopped
- β2 cloves garlicminced
- β1-inch piece gingergrated
- β1 tsp fish sauce (optional)for added flavor

Heat the coconut oil in a large skillet over medium-high heat.

Add the chopped onion and cook until browned, about 5 minutes.

Add the minced garlic and grated ginger and cook for 1 minute.

Add the chicken breast and cook until browned on all sides, about 5-6 minutes.

Add the lime juice, lime leaves, and fish sauce (if using) to the skillet.

Bring the mixture to a simmer and cook for 10-12 minutes, or until the chicken is cooked through.

Reduce heat to low and braise the chicken for an additional 10-15 minutes.
