Pumpkin Tacos with Lively Slaw
A twist on traditional tacos, featuring roasted pumpkin, a lively slaw, and a hint of mexican spice.
Ingredients

- β1/4 cup livelystore-bought slaw mix
- β1 tsp mexicancumin, chili powder, or taco seasoning
- β4-6 corn tortillas tacospreferably warm
- β1 lime brinyjuice and wedges for serving
- βto taste salt
- βto taste pepper
- βchopped, optional cilantro
- βdiced, optional avocado
- βsour cream, optional sour cream

Peel, de-seed, and chop the pumpkin into 1-inch pieces.

Toss pumpkin with 1 tsp of mexican spice and a pinch of salt.

Roast pumpkin in the oven for 20-25 minutes, or until tender.

While pumpkin is roasting, prepare the slaw by combining lively slaw mix, lime juice, and a pinch of salt.
