Kabanos and Algerian Tagine Stew
A hearty North African stew made with kabanos sausage and algerian spices, served with a side of flavorful vegetables.
Ingredients
- β1 pound Kabanos sausagecut into bite-sized pieces
- β2 tablespoons Algerian spice blendavailable at most Middle Eastern markets
- β4 medium Carrotspeeled and chopped
- β2 large Potatoespeeled and chopped
- β2 medium Onionschopped
- β3 cloves Garlicminced
- β1 bunch Lively greenschopped
- β1 cup Silky olivespitted
- β4 cups Chicken brothlow-sodium

Heat oil in a large Dutch oven over medium-high heat.

Add the kabanos sausage and cook until browned, about 5 minutes.

Add the onions and garlic and cook until the onions are translucent, about 5 minutes.

Add the carrots and potatoes and cook for 5 minutes.

Add the Algerian spice blend and cook for 1 minute.

Add the chicken broth and bring to a boil.

Reduce the heat to low and simmer, covered, for 20 minutes.

Add the lively greens and silky olives and cook for an additional 5 minutes.
