Lamb Skewers with Herby Irish Flair
A flavorful and colorful lamb skewer recipe infused with the freshness of lovely herbs and crispy vegetables, all in a delightful Irish twist.
Ingredients
- β500g lamb shoulder
- β1 sprig lovely fresh rosemaryfor garnish
- β1 sprig lovely fresh thymefor marinade
- β25g irish butterfor marinade
- β25g irish all-purpose flourfor dusting
- β2 heads crisp lettucefor serving
- β4 crisp carrotsfor skewering
- β4 crisp bell peppersfor skewering
- β1 crisp onionsfor skewering
- β1 cup crisp mushroomsfor skewering

Preheat grill to medium-high heat.

In a bowl, mix together irish butter, lovely fresh thyme, and a pinch of salt.

Add the lamb shoulder to the bowl and coat with the marinade.

Thread the lamb, crisp carrots, crisp bell peppers, crisp onions, and crisp mushrooms onto skewers.

Season the skewers with salt and black pepper.

Grill the skewers for 8-10 minutes per side, or until the lamb reaches an internal temperature of 63Β°C.

Dust the skewers with irish all-purpose flour.
