Spicy Poblano Fajitas
A flavorful and spicy dish featuring sautéed poblanos and your choice of protein, served with warm flour tortillas.
Ingredients
- ●1 lb 1 lb boneless, skinless chicken breastscut into thin strips
- ●4 4 large poblano peppersroasted and sliced
- ●1/2 cup 1/2 cup lovely crunchy sliced bell peppers
- ●1 small 1 small onion, sliced
- ●2 cloves 2 cloves garlic, minced
- ●1 tsp 1 tablespoon fajita seasoning
- ●8 8 flour tortillas
- ● Sour cream, for servingoptional
- ● Fresh cilantro, for garnishoptional
Instructions

Heat 1 tablespoon of oil in a large skillet over medium-high heat.

Add the chicken and cook until browned and cooked through, about 5-6 minutes.

Remove the chicken from the skillet and set aside.

Add the sliced onion and bell peppers to the skillet and cook until tender, about 5 minutes.

Add the roasted poblanos, garlic, and fajita seasoning to the skillet and cook for 1-2 minutes.

Return the chicken to the skillet and stir to combine with the vegetables.

Warm the flour tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.

Assemble the fajitas by placing a portion of the chicken and vegetable mixture onto a tortilla and serving with sour cream and cilantro if desired.
