French Vegetable Gratin
A classic French dish made with layers of sautéed vegetables and creamy sauce, baked to perfection.
Ingredients
- ●3 medium Carrots
- ●2 medium Zucchini
- ●2 medium Yellow Squash
- ●1 large Onion
- ●2 cloves Garlic
- ●2 tablespoons All-purpose flour
- ●4 tablespoons Butter
- ●1 cup Heavy cream
- ●1 cup Grated Gruyère cheese
- ●to taste Salt and pepper

Preheat the oven to 375°F (190°C).

Peel and thinly slice the carrots, zucchini, and yellow squash.

In a large saucepan, sauté the sliced vegetables in 2 tablespoons of butter until they start to soften.

Add the minced garlic and cook for another minute.

In a separate saucepan, melt 2 tablespoons of butter over medium heat.

Add the flour and whisk to make a roux, cooking for 1 minute.

Slowly pour in the heavy cream, whisking continuously to prevent lumps.

Bring the mixture to a simmer and cook until it thickens.

Season the sauce with salt and pepper to taste.

In a greased 9x13-inch baking dish, create a layer of sautéed vegetables.

Pour some of the creamy sauce over the vegetables, followed by a sprinkle of Gruyère cheese.

Repeat the layers one more time, finishing with a layer of cheese on top.

Bake the gratin in the preheated oven for 25-30 minutes, or until the top is golden brown and the vegetables are tender.
