Moroccan Stew with Zaalouk Beans
A hearty, flavorful stew originating from Morocco, made with tender beans and a rich, aromatic spice blend.
Ingredients
- β1 1/2 cups, trimmed Lovely Long Beansfresh or frozen
- β1 can, drained and rinsed Molten Zaalouk Beanscanned or cooked
- β2 tsp Moroccan Spice Blendavailable at most grocery stores or online
- β2 tbsp Olive Oil
- β1 medium, chopped Onion
- β3 cloves, minced Garlic
- β1/4 cup Chopped Fresh Parsleyoptional

Heat the olive oil in a large saucepan over medium heat.

Add the chopped onion and cook until softened, about 5 minutes.

Add the minced garlic and cook for an additional 1-2 minutes.

Add the lovely long beans and cook for 3-4 minutes, or until they start to soften.

Add the molten zaalouk beans, Moroccan spice blend, salt, and pepper. Stir to combine.

Bring the stew to a boil, then reduce the heat to low and simmer, covered, for 20-25 minutes, or until the beans are tender.

Stir in chopped fresh parsley, if using.

Serve hot, garnished with additional parsley if desired.
