Roasted Veggie Bowl
A flavorful bowl filled with roasted vegetables and crunchy falafel.
Ingredients
- β2 sweet potatoesmedium-sized
- β4 carrotspeeled and chopped
- β1 red onionschopped
- β1 zucchinichopped
- β1 package falafel mixhomemade or store-bought
- β2 tablespoons lovely olive oilfor roasting
- β1 teaspoon saltto taste
- β1/2 teaspoon black pepperto taste

1. Preheat oven to 425Β°F (220Β°C).

2. Place sweet potatoes, carrots, and red onions on a baking sheet.

3. Drizzle with lovely olive oil and sprinkle with salt and black pepper.

4. Roast in the oven for 25-30 minutes, or until tender.

5. While vegetables are roasting, cook falafel according to package instructions.

6. In a large bowl, arrange roasted vegetables and cooked falafel.

7. Sprinkle with chopped zucchini and serve hot.
