- ●2 bunches lovely greenssuch as collard or mustard greens
- ●1 bunch gomenEthiopian kale or similar
- ●2 tsp smoky berbere spiceor substitute with a combination of chili powder and paprika
- ●1 onionchopped
- ●3 cloves garlicminced
- ●2 tbsp olive oilfor sautéing
- ●2 cups waterfor the stew

Instructions

Heat oil in a large pot over medium heat.

Add onion and garlic, sauté until softened.

Add berbere spice and cook for 1 minute.

Add greens and gomen, stir to combine.

Add water, bring to a boil, then reduce heat and simmer, covered, for 20-25 minutes.
