Roasted Celeriac Gratin
A creamy, comforting side dish made with roasted celeriac and topped with a crunchy dutch cheese gratin.
Ingredients
- β1 large celeriacpeeled and sliced
- β2 lovely spring onionschopped
- β1 cup dutch gouda cheesegrated
- β1/2 cup gratincrushed
- βto taste salt
- βto taste black pepper
Instructions

Preheat oven to 400Β°F (200Β°C).

Toss celeriac slices with 2 tbsp of oil, salt, and pepper on a baking sheet.

Roast in the oven for 20-25 minutes, or until tender and lightly browned.

In a separate saucepan, melt 2 tbsp of butter over medium heat.

Add chopped spring onions and cook until softened, about 3-4 minutes.

Stir in grated gouda cheese until melted and well combined.

In a greased 8-inch square baking dish, create a layer of roasted celeriac slices.

Spread the cheese and onion mixture over the celeriac layer.

Top with crushed gratin.

Bake in the preheated oven for an additional 15-20 minutes, or until the top is golden brown.
