Bramley Apple Coq au Vin
A low-carb twist on the classic French dish, featuring tender chicken in a rich apple and red wine sauce.
Ingredients
- β4 Chicken breastboneless and skinless
- β2 Bramley applespeeled and sliced
- β1 cup Low-carb red winesuch as Merlot or Cabernet
- β2 tbsp Unsalted butterdivided
- β1 tbsp Olive oil
- β1 Onionpeeled and sliced
- β2 cloves Garlicminced
- β1 tsp Thymedried
- β1 tsp Salt

Heat the olive oil in a large skillet over medium-high heat.

Add the chicken and cook until browned, about 5 minutes. Remove from the skillet and set aside.

Add the butter to the skillet and melt. Add the sliced onion and cook until softened, about 5 minutes.

Add the minced garlic and cook for 1 minute.

Add the sliced apples and cook for 2-3 minutes, or until they begin to soften.

Add the red wine to the skillet and bring to a simmer.

Return the chicken to the skillet and cook until the sauce has thickened and the chicken is cooked through, about 5 minutes.
