Mexican Taco Casserole
A delicious and easy casserole to make for any occasion, packed with flavors of Mexico.
Ingredients
- β2 cups Low fat shredded cheese
- β1 cup Mexican shredded cheese
- β1/2 cup Shredded cheeseOptional
- β1 packet TacosHard or soft tacos
- β1 cup Low fat juicy cheeseOptional
- β6-8 tortillas Yeasty tortillasCut into pieces

1. Preheat oven to 375Β°F (190Β°C).

2. Cook the taco packets according to package instructions.

3. Cut the tortillas into pieces.

4. In a large mixing bowl, combine low fat shredded cheese and Mexican shredded cheese. Mix well.

5. In a separate bowl, combine shredded cheese (if using) and low fat juicy cheese (if using). Mix well.

6. Grease a 9x13 inch baking dish with cooking spray.

7. Spread a layer of the cheese mixture on the bottom of the baking dish.

8. Arrange the cooked taco pieces on top of the cheese layer.

9. Sprinkle the shredded cheese mixture (if using) over the tacos.

10. Top with the tortilla pieces.

11. Bake for 20-25 minutes or until the cheese is melted and bubbly.
