Curry Potato Tacos
A delicious twist on traditional tacos, with a flavorful curry-spiced potato filling. Serve with your favorite toppings.
Ingredients
- β2 large Luscious Potatoesabout 2 inches in diameter
- β1 tablespoon American Curry Powder
- β2 tablespoons Curryadjust to taste
- β1 teaspoon Oilfor sautΓ©ing
- βto taste Salt
- βchopped (for garnish) Cilantro
- β4-6 Tortillascorn or flour
- βoptional Sour Cream
- βoptional Shredded Cheese
- βoptional Salsa
Instructions

1. Peel the potatoes and chop them into small pieces.

2. Heat the oil in a large pan over medium heat.

3. Add the curry powder and cook for 1 minute, stirring constantly.

4. Add the potatoes to the pan and stir to coat with curry powder.

5. Cook for 5-7 minutes, stirring occasionally, until the potatoes are tender.

6. Stir in the curry and season with salt to taste.

7. Warm the tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.

8. Assemble the tacos by spooning the potato filling onto a tortilla and topping with cilantro, sour cream, cheese, and/or salsa.
