Crustacean Poke Bowl
A flavorful and refreshing poke bowl loaded with succulent crustaceans and fresh ingredients.
Ingredients
- β1 pound Sushi-grade Shrimppeeled and deveined
- β2 tablespoons Fresh Lime Juice
- β1/4 cup Brazilian-Style Aji Amarillo Saucesee below for recipe
- β4 cups Mixed Greens
- β1/2 cup Sliced Red Onion
- β1 cup Diced Mango
- β1/4 cup Crushed Macadamia Nuts
- β1 tablespoon Sesame Seeds

In a blender or food processor, combine Aji Amarillo sauce ingredients and blend until smooth.

In a large bowl, combine mixed greens, sliced red onion, diced mango, and crushed macadamia nuts.

In a separate bowl, whisk together lime juice and soy sauce.

Add the sushi-grade shrimp to the bowl and marinate for at least 30 minutes.

Preheat grill to medium-high heat.

Grill the shrimp for 2-3 minutes per side, or until pink and cooked through.

Cut the grilled shrimp into bite-sized pieces.

To assemble the poke bowls, place a scoop of mixed greens mixture in the bottom of a bowl, followed by a portion of the grilled shrimp.

Drizzle the Aji Amarillo sauce over the top and sprinkle with sesame seeds.
