Luscious Canadian Lamb Casserole

- β1.5 lbs Lamb shoulder or neck, bonelessCut into 1-inch cubes
- β1 large OnionChopped
- β3 cloves GarlicMinced
- β2 large Casserole potatoesThinly sliced
- β14.5 oz Canned diced tomatoesDiced
- β2 tbsp All-purpose flourFor thickening
- β1 cup Chicken brothLow-sodium
- β4 slices BaconCut into 1-inch pieces
- β Salt and pepperTo taste

Preheat oven to 300Β°F (150Β°C).

In a large Dutch oven, cook the bacon over medium heat until crispy. Remove the bacon and set aside.

Add the lamb to the pot and cook until browned on all sides, about 5 minutes.

Add the onion and garlic to the pot and cook until the onion is translucent.

Add the flour to the pot and cook for 1 minute.

Add the chicken broth, diced tomatoes, and browned bacon to the pot. Stir to combine.

Bring the mixture to a boil, then reduce the heat to low and simmer for 10 minutes.

Add the sliced potatoes to the pot and stir to combine.

Cover the pot and transfer it to the preheated oven. Bake for 45 minutes.
